Nan (Baked bread)
It's the most common daily food in Xinjiang which is made of wheat flour. There are many kinds of nan breads in Xinjiang and it's different in shape. Some of them are made of vegetable oil, onion and sesame. And some of them are made of milk, butter, sugar or lamb. Some of them are small, some of them as big as the Michelin tires. It's crispy and tasty .It can be kept for months in a dry place. So in the past it was the nomads' food during the journey.
Pilaf Rice £¨×¥·¹£©
Pilaf rice is one the most delicious dishes among Uighurs in Xinjiang. It can be found from the restaurants all over the region. It's made of fresh lamb, rice, carrot, onion, vegetable oil etc. There are many kinds of pilaf rice in Xinjiang, some of them cooked with chicken, dried fruits or vegetables, but mostly with lamb. The Uighurs love to eat the pilaf rice with fingers several people sitting around a big tray. It's regarded as one of the most nutritious dishes among the Uighur dishes.
Roasted Whole Lamb £¨¿¾È«Ñò£©
Roasted Whole Lamb is one of most famous Uighur dishes in Xinjiang. It's as famous as the Beijing Roasted Duck. It's usually served for the special occasions. Two years old baby lamb will be slaughtered and skinned, internal organs will be removed. It'll be dubbed with the mixture sauce of eggs, ginger, fine flour, scallions and some other spices. Then it'll be placed in a special oven, and turn it around and round from time to time. The oven should be covered during the cooking. When it's ready, it becomes golden brown and crispy. People usually sprinkle some spices such as cumin, chili pepper and salt when they eat it. This special dish can be found in the bazaars of Xinjiang.
Laghman (Hand-made Noodle ) °èÃæ
It's one of the common dishes in Xinjiang and can be found in the small and big restaurants all over the region. First they make dough, oil it and cover it. Then make it in slices, again oil it. Then make it thinner and thinner by rolling it. After some minutes, it will be stretched repeatedly by hands, and it becomes very thin. It will be boiled until it's well-cooked. Then it will be mixed with stir-fried meat vegetables (chili pepper, cabbage, garlic, tomato) and sauce. According to your taste you can add some vinegar or chili sauce. Don't forget to try one or two meters of these noodles when you are in Xinjiang.
Peter Manta (Thin skinned steamed Bun ) ±¡Æ¤°ü×Ó
It's stuffed with lamb, onion and mixture spices of salt and pepper. Then it will be steamed in the oven for some time. There are many kinds of Mantas in Xinjiang except Peter Manta such as Kawa (pumpkin) Manta , Aash Manta , Bolah Manta and Renglik (Multi –colored) Manta . Some of them will be eaten together with Pilaf Rice, that's Aash Manta. People sprinkle some peppers on it, makes it more delicious.
Samsa ( Baked Buns ) ¿¾°ü×Ó
It's stuffed with lamb, lamb fat and onion. Then it' baked on the wall of a special oven which is heated by charcoal. When it's ready, it turns to golden brown and crispy. It's one of the most popular fast food in the region. Don't forget to eat it when it's fresh.
Kebab (ÑòÈâ´®)
Kebabs can be found all over the region. You can find the kebab stalls almost everywhere. The kebabs will be placed on a preheated oven and rolled frequently. During cooking it'll be seasoned with salt, hot chili powder and cumin. Some of the kebabs have sesame on it, makes it more tasty and tender.
Spicy Chicken £¨´óÅ̼¦£©
It's one of the most famous Muslim Hui dishes in the region, even in the country. A young chicken will be slaughtered, and cut it into pieces .It'll be cooked in the vegetable oil for more than 15 minutes and the hot chili peppers will be stir –fried together. Some restaurants also add some potatoes or nan bread in it. If you are an adventurous eater, please try this really hot and spicy dish. People first enjoy the chicken, then mix the flat noodle into the sauce and eat it.
Narin Chup £¨ÄÉÈÊÃæ £©
Narin is popular among the Uighur, Uzbek, Kirghiz and Kazak people. First the lamb will be boiled with carrots.When its ready, lamb and carrot will be chopped into small pieces and mixed with the boiled noodles. The lamb soup is also served to mix with the noodles, thus it brings a superb taste to the dish. It's one of the delicatessens of the region. |
